Quick & Easy Make-Ahead Breakfasts
Confession: lately I found myself getting really lazy in the morning and opting to buy my breakfast rather than make something at home. With hectic weekday morning schedules, the long-held dream of fresh-stacked blueberry pancakes with perfectly poached eggs will have to be delayed until the weekend.
Determined to save money, time and calories, I decided to pre-make my own breakfast this weekend. You can do it too! It was super easy, fairly healthy and took me about 15 minutes to make an entire week’s worth of breakfast.
First, I scrambled a dozen eggs. You’ll want them to be a bit on the wet side when you are through, since you’ll be freezing and re-heating them, and dry eggs aren’t the tastiest. 🙂
Then, I sliced up some sausages that I picked up at Costco. These ones are awesome and were pre-cooked, so I didn’t have to even cook them.
I added the sausage pieces to the scrambled eggs, and then scooped the mixture into a muffin tin. After that I covered the tin with plastic wrap and stuck it in the freezer.
The next morning I put a pair of the egg-mixture into several ziplock bags and left them in the freezer. Each night before I go to bed I pack my lunch, so now I just add a ziplock of the eggs into my lunch bag. The eggs dethaw in the fridge overnight and when I get to work I can reheat them in the microwave for 1 ½ minutes. Pair with some fruit, or toss in some fresh spinach before microwaving, and you’ve got a quick, affordable, delicious breakfast. 🙂

I also have been having a hard time getting out of bed in the morning, and I end up skipping breakfast or grabbing something on the go — neither of which is healthy!
