Pumpkin Smoothie Bowl Recipe

Have you all seen the new smoothie bowl trend? I’m so into it right now! Since it’s the season of all things pumpkin, I came up with this yummy pumpkin smoothie bowl recipe to share with you all! The smoothie is dairy-free, naturally sweetened, made with all Whole30-approved ingredients and makes a delicious breakfast or snack!

The main difference between a traditional smoothie and a smoothie bowl is the thickness. A smoothie bowl is much more thick than a drinkable smoothie, as you eat it with a spoon instead of drink it with a straw. Bananas make an excellent thickener, but you can also use extra ice. Since I’m still on the Whole30, maybe for forever, I made this smoothie with a coconut milk base—it blends with the pumpkin flavor so nicely!

Another defining characteristic of smoothie bowls are the toppings. This pumpkin smoothie bowl recipe has plenty of toppings, but you can add more or take some out based on preference. I tend to like plenty of toppings myself! All the ones on this bowl are fall-friendly, like apples, pecans and raisins to name a few. Pumpkin seeds were another addition—they added a salty, earthy pop which enhanced the sweetness, but they are very chewy, so be forewarned!

Pumpkin Smoothie Bowl Recipe
serves 2

1/2 can of coconut milk
2 bananas
1/2 cup pumpkin puree
15 ice cubes
1/8 tsp each- nutmeg, allspice, cloves
1/4 tsp cinnamon

Blend all ingredients—should be a thick smoothie. Add more ice if needed. Do not overblend.

Add desired toppings and serve immediately!

Suggested toppings:
Diced apple and/or pear
Chopped pecans and/or walnuts
Chia seeds
Pumpkin seeds
Raisins
Drizzle of maple syrup or honey (not Whole30 approved)
