Easy Homemade Ice Cream


There’s certain things that just sound like Summer to me- watermelon, mojitos, and- of course- ice cream!  There’s nothing quite like homemade ice cream-but how do you make homemade ice cream if you don’t have an ice cream maker? It’s easier then you think.  There’s a little bit of cheating in this one- but in a pinch it works!

Start with the best ice cream in the world as your  base – Bluebell’s Homemade Vanilla, of course! 🙂

After letting it soften for a few minutes on the counter, then scoop some into a mixing bowl.  I used my Kitchenaid Mixer which worked beautifully.  You might be able to mix it by hand or with another mixer but it might be a bit of a work out. 🙂  I put some mini peanut butter cups as well as a few tablespoons of peanut butter.

Using the paddle mixer attachement I mixed it all on level 4 for about 60 seconds.

I had a dish lined with parchment paper, and scooped the softened ice cream mix out into it. I stuck it in the freezer to reharden a bit for about 20 minutes and it was good to go!

I am excited thinking about all the possibilities and flavor combinations- peach or blackberry, rosemary and rose water, cookie dough, etc etc. 🙂 Any flavor ideas?
