A Lazy Saturday Afternoon Cocktail

Happy Monday!! How was everyone’s weekend?! This weekend was one of those rare ones where we didn’t have a huge to-do list, or an agenda of items to be checked off.  We got to do a lot of fun projects that I am super excited to share with you all- but we took a break from everything on Saturday afternoon to enjoy some beautiful Texas weather and a cocktail.  You see, this weekend was the first time in three months where it wasn’t steaming hot.  In fact, it was a cool 75 degrees!! It was perfect.  The sun was out, there was a breeze and it was perfect sundress weather.

I know some parts of the country have been well into fall for several weeks, but we are in this beautiful in-between season right now.  I wanted to squeeze a few more summer cocktails out and this is one of my favorite- super simple, super delicious- just like it should be.  It’s also a somewhat dangerous cocktail- you can’t taste any alcohol and it would be very easy to gulp down a couple of these!

We brew our iced tea fresh the old fashion way- in a pot of boiling water using hot tea bags.  We used Awake tea, and it is delicious.

If you all haven’t ever had Persian cucumbers- you must must must try them! They are incredible – so much better then regular cucs! They are super flavorful and tiny- I eat them for snacks daily! I got these from Trader Joes, but have seen them at several grocery stores.  If you can’t find Persian, English will work as well.

Measure and pour your Bacardi Limon into each glass, and fill the rest of the glass with tea.  Add sweetener if you like- it tastes good with or without it to me!  And of course- what iced tea cocktail wouldn’t be enhanced by Mason Jars?

Skewer your cucumber and muddle into the glass slightly.  Enjoy the last lingering days of warm weather!

Spiked Citrus Iced Tea

16 ounces of fresh brewed iced tea, divided
2 ounces of Bacardi Limon, divided
1 Persian (or English) cucumber
Sugar/sweetener to taste

Start with two glasses with ice.  Pour one ounce of Bacardi into each glass, and top with 8 ounces of fresh brewed iced tea.  Add sweetener to taste and stir well.  Slice one Persian cucumber and skewer, muddling cucumber into the bottom of the glass.  Drink with a straw and a smile. 🙂

In fact- you should make one tonight.  It’s Monday- celebrate! 🙂
